1 C. Flour
½ C. Shortening
¼ Tbsp. Sugar
½ Tsp. Salt
1 Tbsp. Vinegar
½ C. Water
For Apple Layer:
3 Tbsp. Butter
4 Large Apples
1/3 C. Sugar
1/2 Tbsp. Flour
1/4 Tsp. Cinnamon
For Cream Cheese Layer:
1 Pkg. Cream Cheese, Softened
2/3 C. Sugar
1 Tsp. Vanilla
Prepare the Crust. Mix 1 C. Flour, ½ C. Shortening, ¼ Tbsp. Sugar, and ½ Tsp. Salt in a large mixing bowl. In a separate bowl, mix 1 Tbsp. Vinegar, ½ C. Water, and 1 Egg. Then, add the wet ingredients to the flour mixture in the large bowl. Add additional Flour as needed and knead by hand, until a soft and slightly sticky dough forms. Refrigerate for 30 minutes.
Prepare the Apple Layer. Melt 3 Tbsp. Butter in a medium saucepan. Peel 4 Apples and cut into chunks. Add the apples and 1/3 C. Sugar to the saucepan and cook on medium-high for 10 minutes. Add 1 Tbsp. Flour and ¼ Tsp. Cinnamon and cook one more minute, until the mixture thickens.
Prepare the Cream Cheese Layer. In a medium mixing bowl, beat 1 Pkg. Cream Cheese, 2/3 C. Sugar, 1 Egg, and 1 Tsp. Vanilla until smooth.
Assemble the pie. Take the Crust mixture out of the fridge and roll out 2/3 of the Crust on a floured surface. Place into a greased pie pan. Pour Apple Layer mixture on top of bottom layer of Crust. Pour Cream Cheese Layer mixture on top of Apple Layer. Roll out the remaining 1/3 of the Crust and cut into strips. Assemble strips on top of pie to form a lattice. Brush additional Butter on top of the lattice and dust with Sugar.
Bake at 425 degrees Fahrenheit for 10 minutes. Then, turn the oven temperature down to 350 degrees and bake for an additional 25 minutes.
